This recipe serves 1.
8-10 green prawns
1/4 cup uncooked quinoa
2 cup water
1/2 red capsicum, seeded, diced
1 celery stalks, finely chopped
1 spring onions, finely chopped
1/2 punnet baby tomatoes, chopped
1 tsp. sesame or peanut oil
1 tsp. sweet chilli sauce
Sear prawns in a little oil over medium heat until they turn pink and remove from pan.
Combine quinoa in saucepan with 2 cups of water, boil and cook until water is absorbed and quinoa is clear.
Stir in remaining ingredients including cooked prawns and serve.
