Helen Schofield is a food photographer and recipe blogger who's had a busy few years travelling between Athens and Perth before recently settling in Nottingham (UK) with her husband. Helen runs the food blog Scrummylane.com and regularly provides healthy recipes to HIF for our Healthy Lifestyle Blog.

When asked why she started ScrummyLane, Helen told us; "After weirding my family and friends out with my strange food photography hobby over the past few years, I guess I’ve finally found something useful to do with it! If nothing else this will be a fun and tidy way for me to archive my recipes for myself … but of course I do hope that some of you will eventually find and enjoy some of the recipes on here too!"

These Greek potatoes by HIF foodie Helen from Scrummy Lane truly deserve to have the words 'the best' in their title. They're tasty, creamy, and crispy all at the same time, and go with anything. According to Helen, "They take about an hour and a half to cook, but they are EASY. Simply cut potatoes into thick wedges, tip into a baking dish and pour over stock, olive oil, lemon juice and oregano. Bake for 45 minutes, stir well, then bake for another 45 minutes - simple." Enjoy
